Physico-Chemical and Bacteriological Qualities of Raw Milk from Collection Centers and Hawking Activity in the Rabat-Salé-Kenitra Region (Morocco)

The study aims to analyze the two circuits of dairy chain: authorized and unauthorized, by studying parameters influencing physico-chemical bacteriological quality milk in both networks. Samples raw (n=22), collected from nine collection centers (CCL): four five unauthorized region Kenitra, hawking points Rabat, during a period between March May 2022, were analyzed evaluate their physicochemical qualities. included measurement chlorides, lactose fat content, determination titratable acidity freezing point. was assessed counting total aerobic mesophilic flora (TAMF), fecal coliforms, presumed pathogenic staphylococci searching for Salmonella. content varies considerably depending on where samples are collected; average is 4.13% licensed centers, versus 2.94% unlicensed 2.82% activity. In terms hygienic quality, bacterial load TAMF 3.8×108 CFU/ml. Total coliforms (TC) present with an rate 9.37 ×105 CFU/ml portion 7.87 ×103 (FC), 1.03 ×106 staphylococci. On other hand, activity showed higher levels microbial contamination than those centers. Salmonella not detected any analyzed. non-compliance hygiene practices late application cold milking, collection, transportation milk, partly explain origin this finding.
